I don't think I fully understand your concern.

On your boxes you have disabled IPv6, so in your situation you can use
both types packages: a package built on a box with IPv6 (I guess IPv6
hasn't been enabled in nginx.conf yet) as well as a package built on a
your boxes with IPv6 disabled.
