I want to point out I made a mistake here in my email. The desired
strings are "FreeBSD-XX_YY" and "FreeBSD-kernel-XX_YY", so the correct
sed transformations of freebsd-version would be:

freebsd-version -u | sed 's,^,FreeBSD-,;s,-RELEASE-p,_,'

freebsd-version -k | sed 's,^,FreeBSD-kernel-,;s,-RELEASE-p,_,'

My servers were patched, so I didn't have a live system to test on! :-)
