AFAIK, it is sufficient to edit /etc/mail/sendmail.cf and
comment or delete  the follwoing line:
O DaemonPortOptions=Port=587, Name=MSA, M=E
and restart sendmail afterwards.

regarding ipfw,
reject tcp from any to me 587 
would be an appropriate rule.
