    Can you try and boot from an 11.2RC USB stick and see if you can mount /

Sorry, didn't reply to all....

Unfortunately same results with 11.2RC, which would suggest an issue with the pool. Doing zpool import does however show all 6 disk in the RAID-Z2 as online. I assume some kind of metadata corruption. I'm not sure what course of action I could take without zpool/zfs command.
