how 'supported' are 3ware Escalade controllers?

Well, they do list FreeBSD under both, 7000/8000 and 9000 (even though
5.x is not explicitly mentioned).
But to answer your question, the 7000/8000 series is supported by the
twe driver (a list of supported hardware is in the manpage).
