roughly speaking routing an Android device doesn't allow you to replace
the Linux based Android by a "real" Linux, neither does a jailbreak of
an iOS device allow you to replace Darwin with a "real" FreeBSD, instead
you keep all the drivers, you just "unlock" the formerly locked root
account.

Be that as it may, I have never heard of a project that is reliable and
still supported. Mark Shuttleworth has given up his project.

There are projects that are doing more than an averaged rooting or
jailbreak, so you can replace the operating system with more or less
reliable drivers and there are probably also DIY hardware projects
available, but even then you likely need to buy expliciet hardware
components and I doubt that those projects are very reliable. Even fishy
energy-saving is already a showstopper.
