Perhaps you need to check that your root shell prompt is followed by a
space?  It sounds like it's su'ing ok, but not spotting the prompt
afterwards.

Perhaps it's worthwhile doing M-x customize RET tramp-debug-buffer RET
so that you can see all the commands that are going on in the
background.
