Indeed, the last line in /usr/local/bin/poudriere is 
exec env -i ${CMD_ENV} /bin/sh ${SETX} "${POUDRIEREPREFIX}/${CMD}.sh" $@

where  ${CMD_ENV} contains only PATH and POUDRIERE_VERSION. That's
where HOST is being stripped from the environment.

Case closed IMHO. Thanks to everyone who replied.
