Hi Erin--
The answers to these questions will be specific to the product you are considering, open source or otherwise. If you could let us know what specific software you're looking at, perhaps we could point you in the right direction (for example, is it FreeBSD?). However, in the general case, POSIX.1e ACLs are a local file system access control mechanism unrelated to cryptography, and are therefore unlikely to involve cryptography in their implementation.
