They're discussed practically on a monthly basis on the mailing lists
(either freebsd-fs or freebsd-stable). Keeping track of them is almost
impossible at this point, which is also probably why the Wiki is
outdated.
See my other follow-up post to the OP regarding what most of the tunings
should be. On an 8.0 system, there may be some tunings I listed off
that won't work (loader(8) will complain "no such tunable" and won't
boot). I think the UMA tunable is one of those.
Please don't ask me "how was I supposed to know about any of this?" --
basically folks are ""expected"" to follow every single CVS or SVN
commit to the FreeBSD tag you track/use, and are expected to read the
diffs when there's a commit and "figure it out themselves". The release
notes between 8.x and 8.x+1 don't disclose tunable changes either. If
you don't like this model/approach, there are appropriate channels to
send your complaints through -- but I myself simply gave up.
