While it is a design decision, the vast majority of art professors are not
necessarily typographers. Though typography is art, too, what we see
walking down the street is not the same as reading type.

There is nothing wrong with black (#000). Boks still print in solid black
with white background. If the glare of the white background is too much,
you can decrease the contrast but, even then, one needs to be careful to
maintain contrast.

Yes, gray is a color, too, but using it means you have a reason to do so
and, far too often, some web sites use gray text because someone else did,
or they read about it somewhere, but no other reason they have knowledge of.
