FWIW, my dovecot logs by default to:
	/var/log/maillog
Logging is configured in:
	/usr/local/etc/dovecot/conf.d/10-logging.conf
and these variables might be of interest:
	auth_verbose = yes
	auth_debug = no
	mail_debug = no
	verbose_ssl = yes
