Yes, you can check out a subset/subdirectory, e.g.:

svn co svn://svn.freebsd.org/doc/head/en_US.ISO8859-1 /path/to/local/working/copy

svn co svn://svn.freebsd.org/doc/release/9.1.0/en_US.ISO8859-1 /path/to/local/working/copy
