SETOPT and UNSETOPT ?

As in:

   # cd /usr/ports/foo/bar
   # make SETOPT="THIS THAT" UNSETOPT="THEOTHER" install

Since it is setting or unsetting options, and that expresses the user's
wishes clearly and succinctly.
