/var/db/pkg deleted..what to do?

Unfortunately that's about the only option apart from 'restore from a
backup'.
You could try to use the pkg_which port to identify files that are
unclaimed by installed ports (see the manpage) and then try to figure
out which ports they belonged to, as an aid to memory.
