Update default option to match upstream

Update default image engine option for graphics/py-sorl-thumbnail to be
consistent with upstream.

As the developers state, PIL is their default option because many people
already have it installed and it produces good quality images. As the default
setting in the configuration it is more user-friendly to also be the default
dependency. Alternate engines remain an option for users who have a specific
need, but consistency with the upstream default is logical without an
overriding reason to deviate from the norm.
