This is the full list:

audio/esound: old enlightenment sound server, no gnome port seems to
  depend on it.
converters/libiconv: I can take this.
devel/(py-)dbus(-glib): not strictly gnome related, but somebody has to
maintain it. Maybe kde@ would keep this more up to date. Maybe
freedesktop ports could be assigned to desktop@ (seems inactive
  though).
devel/libassetml: dependency of games/gcompris (gnome2 game)
devel/libdaemon: avahi dependency
devel/libgalago: nothing depends on it according to INDEX, maybe
  something optional?
devel/libgit2-glib: maybe assign to libgit2 maintainer, seems to have
the same version so probably released together.
devel/ndesk-dbus(-glib): C# stuff, maybe assign to mono@
games/gcompris: gnome2 game, current releases use Qt5
graphics/(py-)gimp*: separate project, some gimp user could maintain this
graphics/glitz: nothing depends on it according to INDEX
graphics/inkscape: separate project, some user could maintain this
graphics/mypaint-brushes: gimp related
mail/balsa: separate project, some user could maintain this
misc/pnpids: nothing depends on it according to INDEX
net/(py-)avahi*: separate project
net/libdmapsharing: separate project, some user could maintain this
net/libproxy*: separate project
net/uhttpmock: separate project, nothing depends on it according to INDEX
net-im/loudmouth: dependency of telepathy-gabble (freedesktop)
news/pan: separate project, some user could maintain this
ports-mgmt/packagekit: separate project, nothing depends on it according to INDEX
textproc/aiksaurus: separate project, nothing depends on it according to INDEX
x11/babl: part of gimp
x11/xfree86_xkb_xml: separate project, nothing depends on it according to INDEX
x11-fonts/libXft: part of Xorg
x11-themes/lxappearance: part of LXDE, not gnome
x11-toolkits/c++-gtk-utils: separate project, nothing depends on it according to INDEX

more freedesktop ports:
audio/freedesktop-sound-theme
audio/pulseaudio
devel/appstream-glib
devel/desktop-file-utils
devel/eggdbus: nothing depends on it according to INDEX
devel/py-xdg
devel/xdg-utils
graphics/poppler*
graphics/shared-color-profiles
misc/hicolor-icon-theme: should be updated
misc/shared-mime-info: should be updated
net/geoclue
net-im/farsight2
net-im/farstream
net-im/libnice*
net-im/libtelepathy
net-im/papyon (MSN does that still exist?)
net-im/telepathy*
print/cups-pk-helper
print/harfbuzz(-icu)
print/libspectre
sysutils/hal(-info)
sysutils/policykit
sysutils/polkit
sysutils/upower
x11/startup-notification
x11-fonts/fontconfig(-reference)

more not really gnome related:
converters/fribidi
converters/psiconv
devel/libical
print/freetype2
security/libpwquality: also used by sysutils/plasma5-user-manager
sysutils/consolekit2: used by all display managers
textproc/exempi: also used by misc/tellico (kde)
textproc/(py-)libxml2
textproc/(py-)libxslt
x11-fonts/bitstream-vera: should probably be phased out and replaced by
  dejavu
