I think it is a good idea to build V40 by default.
Hinting can be disabled at runtime (via FREETYPE_PROPERTIES).
But it is better to document how to get old behavior (in /usr/ports/UPDATING?)

Port users are free to change options and recompile. Growing number of binary
package users have no such freedom. So default set of options should be most
useful for some average pkg user.
