Try DEFAULT_VERSIONS += gcc=5 set via /usr/ports/www/firefox/Makefile.local.
Not sure if portsnap(8) touches untracked files on updates. Makefile.local is
parsed after make.conf and port's own Makefile, so it can override or append
some variables, even those defined as = or :=.
