This problem occurs when installing/running sysinstall on FreeBSD 8.0. I used i386, but I the same issue is present for other architectures.

If a graphical user interface is desired then a distribution set that is preceded by an X should be chosen.

is present. This is out of date, because there are no longer any distribution sets that are preceded by an X.

In addition to the information in the handbook, there is a related problem in the documentation found in sysinstall for FreeBSD 8.0 about the distribution sets. The text 

An "X-" prefixed before a distribution set means that the Xorg base
distribution, libraries, manual pages, servers and a set of default
fonts will be selected in addition to the set itself..

is also out of date

Run sysinstall
Choose Standard
Proceed as normal until "Choose Distributions"
