ZFS panic under extreme circumstances (2/3 disks corrupted)

I'm more interested in the hang than the panic. "fletcher2" has known
limitations in terms of the data integrity guarantees it can provide.
If you're interested in pursuing this line of inquiry you should
switch to a checksum with stronger guarantees.
