defaults change v1

Attaching a patch I've successfully tested to change the default to
xfce-icons-elementary.

This patch also includes a note to be added to UPDATING to inform users.

Also note that the adwaita theme will be depended upon indirectly anyway, since
gtk3 requires it.

Before committing this change I'm going to test how things turn out without
forcing defaults and not installing any extra theme.
