Do you think it would be worth to adjust ifconfig to make trailing spaces or
other bits more clear?

But then ifconfig -v wlan0 list scan will give you:
  ... SSID<test> ...
and I would assume a trailing space would be visible there.

Should we maybe update the documentation to ifconfig list scan?

ifconfig(8)...
             Specifying the -v flag also
             enables display of long SSIDs.
<insert> It will also show trailing spaces in SSIDs more clearly.
