Was the build of windowsmaker (and the dependencies it built) the only addition to the environment compared to a no-ports environment for your later attempt to build u-boot-pine64? Presuming yes, for your X11 subset to make a difference, that would mean that files from X11 are being used that should not be used. Likely some form of search path or find command or such that then finds X11 content via some file name match(s) and uses such. That may help narrow things down for finding how the injection happens.
