uname(1) and uname(3) are just acting on behalf of sysctl.
The files involved are...
uname(1):
/usr/src/usr.bin/uname/uname.c
uname(3):
/usr/src/sys/sys/utsname.h
/usr/src/lib/libc/gen/uname.c
/usr/src/lib/libc/gen/__xuname.c
Looking at them, if there is UNAME_* environment variable, it only echoes its
value, if not, it only gets the value by sysctl.
The original value will not change until it is rewritten by sysctl.
