Something like this might do what you want:

  cd /
  sudo tar czf /tmp/PORTNAME.tar.gz `port contents PORTNAME | grep -v 'Port.*contains:'`
  port uninstall PORTNAME
  sudo tar xzf /tmp/PORTNAME.tar.gz
  rm /tmp/PORTNAME.tar.gz
