I have figured out part of the issue.

I will be submitting a patch shortly that will allow OnlyOffice to successfully
convert numbers files to xlsx files, which can then be edited.

I strongly suspect the inability to directly edit numbers files is related to
the temp folder settings or permission/process, and the internal workings of
the onlyoffice server... and/or jail permissions.
