maintainer update for graphics/opencolorio

Update graphics/opencolorio to v2.5.0

Currently docs fail, as I believe this is on for pkg building, I have forced
off by setting graphics_opencolorio_UNSET_FORCE=DOCS. Not sure this is the best
way.
