There are several configuration files:

~/.epsonscan2/DefaultSettings.SF2
~/.epsonscan2/Settings/CommonSettings.SF2
~/.epsonscan2/Settings/XXXXXX/UserSettings.SF2

where XXXXXX is your model, ES00A1 in your case.

There's a Resolution setting in both DefaultSettings and UserSettings.

Please make sure you read the pkg-message and the Read_me.FreeBSD file.  This
has info about all the things needed to set up epsonscan2 and
epsonscan2-non-free-plugin.
