The problem is ... I switched to -release. On -stable it crashed very
frequently resulting in disruptions of customer traffic, which is something I'd
like to avoid.

Right now I don't have a server running stable.

Were you not able to reproduce the issue on your setups?
Nginx with http/https traffic ~400-1200 rps throughout the day resulted in
crashes varying from once every hour to once every 2-4 days.
