If what you need are the softwares that work and not documents, the workaround
can be setting

OPTIONS_UNSET= DOCS MANPAGES

in /usr/local/etc/poudriere.d/make.conf

Given the time that passed to update sphinx from 5 to 9.0.4, even downgrading
might need months and python 3.10 support would be dropped in between.
