There are some tips to speed up your Ooo. But if your Ooo took minute to start, I guess that your system has a low hardware?
For short/unstructure documents, I suggest you to use Ooo (it slows but you can type the document quickly:D) For long/structure documents, LaTeX is a good choice. It is said that ConTeXt is good replacement of LaTeX but I have never tried it.

Have you ever tried Google Spreadsheet or something like that?
