optimal CPUTYPE / arch for Intel T5600 ?

No it's configured correctly. See /usr/share/mk/bsd.cpu.mk

If you want amd64, you should have installed the amd64 architecture. But
remember that some ports (e.g. flash plugin) are only available for the
i386 architecture.
