I use skype (  skype-1.2.0.18_2 ) extensively, no problems at all (other than
being an old version compared to win32 or OSX...but that's Skype's fault, not
ours).

you may want to launch skype from an xterm and see if any messages are shown.
They are usually helpful.

You should also increase the number of virtual channels for your sound card. I
have it set to 8 (ie. 8 simultaneous snd streams)

hw.snd.maxautovchans: 8

you set it with
sysctl hw.snd.maxautovchans=8

as root, and add 

hw.snd.maxautovchans=8

to /etc/sysctl.conf so it persists after reboots.
