The math/gnuplot port depends on latex (print/teTeX-base port). This dependency is not actually mandatory, as gnuplot installs and works fine without latex, and latex brings hell of additional dependencies.

Btw, X11 should also be added to OPTIONS.

cd /usr/ports/math/gnuplot && vi Makefile (remove latex dependency) && make install && gnuplot

Should be trivial: WITH_LATEX option is needed and plist should be corrected.
