To sendmail or to postfix that is the question?

Dovecot. As a bonus, Postfix can use Dovecot's SASL for authentication.

I can't recommend a spam filter, but greytrapping via mail/spamd is a
blessing: it catches 100% of spam on my (low-volume) mail server.
