They should work per the XDG application.menu file:

<LegacyDir>/usr/X11R6/share/gnome/apps</LegacyDir>

There was a bug in the Settings menu, but that should be fixed now.

Run /usr/X11R6/libexec/mixer_applet2 from the command line.  You're most
likely missing a shared library.
